Allergenic proteins and their impact
Hazelnuts are rich in proteins, many of which can trigger allergies and are resistant to heat and food processing. Even small amounts can cause severe reactions, including anaphylaxis, so allergic individuals must strictly avoid them. Cross-contamination during production, such as in chocolate manufacturing, is common, making hidden hazelnut residues a concern.
Pistachios are also high in proteins that can provoke serious allergic reactions even in trace amounts, and many of these proteins remain stable even after heat treatment and food processing. This makes sensitive detection methods essential to ensure proper allergen labelling and to protect consumer safety.
Mustard Common types, including yellow, brown, and black mustard, are widely used in foods, increasing the risk of hidden allergens. Again, even small amounts can cause severe reactions, so allergic individuals must strictly exclude mustard-containing products from their diet. Cross-contamination during production, such as in sausage manufacturing, is common, making trace residues difficult to exclude.
