Allergenic proteins and their impact
Egg Hen’s eggs are rich in protein and an important human food source. While yolk proteins are mildly allergenic, many other proteins in the egg white can trigger allergies. Undeclared egg in foods, often from cross-contamination during production - e.g. chocolate making - poses risks to allergic individuals.
Fish are among the most common causes of food allergies, mainly due to parvalbumin, a small, calcium-binding muscle protein that is highly heat-stable and resistant to denaturation. Because fish allergens are highly cross-reactive, most patients react to multiple species.
Cashew seeds contain about 18% protein, including several allergens, many of which are heat-stable and survive processing. Cashew allergies can cause reactions ranging from mild skin symptoms to severe, life-threatening anaphylaxis.
Given the significant risks these allergens pose, precise and sensitive allergen detection systems are essential to ensure consumer safety.
