Allergenic proteins and their impact

Almond is a protein-rich nut, containing several known allergens, including the heat-resistant almond major protein (AMP) and the cross-reactive allergen profilin.

Even very low amounts of almond can cause severe reactions, including anaphylaxis, so allergic individuals must strictly avoid them. Cross-contamination during production, such as in chocolate manufacturing, is common, making hidden almond residues a concern. Therefore, sensitive detection systems are required to identify almond residues in food.

Macadamia nuts contain relatively low levels of protein, some of which are known allergens, although they remain less well characterized than allergens from other nuts. While macadamia nut allergies are relatively rare, still trace amounts can trigger severe allergic responses. Strict avoidance and sensitive detection of hidden macadamia nut residues are essential, especially due to the risk of cross-contamination during food production.

β-lactoglobulin Bovine milk is a major food allergen, particularly for children, and even small amounts can cause severe allergic reactions. Therefore, milk-allergic individuals must strictly avoid milk and foods containing milk proteins, making sensitive detection and proper labeling essential. Approximately 20% of bovine milk proteins are whey proteins, with the heat-stable allergen β-lactoglobulin being the main component.

Given the significant risks these allergens pose, precise and sensitive allergen detection systems are essential to ensure consumer safety.
