Allergenic proteins and their impact

Crustaceans are among the most important food allergens, partly due to their cross-reactivity with house dust mites. The key allergenic protein is tropomyosin, which is present in all common crustacean species and accounts for around 20% of the total protein in cooked crustacean extracts.

Lupin is a protein-rich legume, with proteins accounting for approximately 35–45% of the seed. Several of these compounds are known allergens and may cross-react with soy and peanut allergens. Due to its valuable nutritional properties, lupin flour is increasingly used as a food ingredient, especially in dairy-free, vegetarian, and gluten-free products. As its use continues to grow, reliable detection of lupin residues is becoming increasingly important for food safety and allergen management.

Ovalbumin is a major egg white allergen, widely used in the food industry and as a fining agent in wine production. For egg-allergic individuals, even trace amounts can trigger allergic reactions, including severe anaphylaxis. Undeclared ingredients and cross-contamination therefore pose significant risks. As allergen labeling is required for wine in the European Union, sensitive detection methods are essential for the reliable identification of ovalbumin residues.

Sesame seeds are very rich in proteins and well-known food allergens. Due to its widespread use in food products, sesame poses a significant risk for allergic individuals. As cross-contamination during food production cannot always be avoided, highly sensitive detection tools are crucial to protect allergic consumers.
